Khmeli-Suneli is a complex herb mix essential to Georgian cuisine. It is used in dishes like chahohbili, satsivi, and kharcho soup. Pre-packaged khmeli-suneli can be found in Russian ethnic food stores (they are usually disguised under names like “European Foods”). The herb mix is usually greenish-brown in appearance.

If you cannot find khmeli-suneli where you live, you can make it yourself. Use the following dried herbs to make khmeil – suneli:

0.5 tsp finely ground basil

0.5 tsp finely ground parsley

0.5 tsp finely ground dill

0.5 tsp finely ground coriander

0.5 tsp finely ground mint

0.5 tsp finely ground bay leaf

0.5 tsp finely ground savoury

0.5 tsp finely ground fenugreek

0.5 tsp finely ground marjoram

0.5 tsp finely ground basil

2 strands of saffron

1/8 tsp hot chilli pepper
